Do zucchinis ever seem sort of bland to you? They don’t have to be – this commonplace vegetable doesn’t have to be something we ignore in our fridge! Not only are zucchinis healthy, readily available, and affordable, their moisture prevents dishes from getting too dry. Since zucchinis have all of these benefits, I’m always trying to fit them into my baking. Luckily I don’t have to look too far. It’s one of those recipes we love to whip up on a Sunday just to have it ready to grab and go throughout the coming week. Our whole family loves this, and we love that it’s so easy. Literally, you just put all the ingredients in one bowl, stir it up, and put it in the baking pan. It doesn’t get easier than that.
