What’s In The Creamy Tomato Dressing?
Mayonnaise — You can substitute half of the mayonnaise for plain Greek yogurt.
Tomato Purée — You can blend your own tomatoes, but using the canned tomato purée cuts down on prep time.
Olive Oil—This helps bind the dressing together.
Lemon Juice — Adds needed acidity.
Dijon Mustard — This also helps emulsify the dressing and add a bit of spiciness to it.
Sugar — A tiny pinch of sugar goes a long way and amplifies the tomato flavor.
Salt and Pepper — These are a must for adding and accentuating the taste of each and every ingredient.

Creamy Tomato Cabbage
Ingredients
- 3/4 cup mayonnaise (or half mayonnaise and half Greek yogurt)
- 1/2 cup tomato purée
- 1 tablespoon plus 1 1/2 teaspoons olive oil
- 1 tablespoon lemon juice
- 1 1/2 teaspoons dijon mustard
- 1 teaspoon sugar
- 3 to 4 cups shredded cabbage
- Kosher salt and freshly cracked black pepper, to taste
Preparation
- In a large bowl whisk together mayonnaise, tomato purée, olive oil, lemon juice, mustard, sugar, salt and pepper.
- Place the cabbage in a bowl and pour the dressing over the tomato dressing over the cabbage, tossing to combine. Season again with salt and pepper, serve, and enjoy!
