If you’re in need of a mouthwatering summer treat then look no further! This easy Raspberry Buckle recipe is bursting with fresh berries baked right into a butter batter. Somewhere between a cobbler and a cake, the buckle is an old-fashioned dessert that gets its name from the intended top caused by the berries. Whatever you want to call it, there’s no denying that it’s one delectable treat.

To start things out, cream together the room temperature butter and sugar until light and airy. Then, add the eggs one at a time, mixing well between each addition. In another small bowl, sift together the dry ingredients: flour, baking powder, and salt. Once combined, slowly add the dry ingredients to the wet and mix until just combined. Transfer the batter to a 8×8-inch baking dish, then comes the star of the show: the raspberries! Sprinkle them over the top of the batter and then gently press them in. Your buckle is now ready for the oven!

You’ll want to bake the buckle for about 45 minutes or until the top is turning golden brown. Serve it up with some fresh whipped cream or a scoop of vanilla ice cream for a real treat. Whether you bake it for a weeknight treat or a family gathering, this easy Raspberry Buckle is sure to be a big hit. Give it a try and let us know what you think!
